Tofu poke bowl

This is such a yummy dinner and easy and cheap to make!

Ingredients
  

  • 1 cup Rice I usually do brown jasmine, but use whatever
  • 1 package Tofu, firm
  • 1-2 tbsp Soy sauce
  • 1 tbsp Corn starch
  • 1 Mango, diced
  • 1 cup Edamame
  • 2 Green onions
  • Furikake
  • 1/4 cup Mayo
  • 1/8 cup Sriracha

Cucumber salad (optional)

  • 1 large Cucumber
  • 1 tsp honey
  • 1 tbsp Rice vinegar
  • 1 tbsp Soy sauce
  • 1 tsp Sesame oil
  • Red pepper flakes

Instructions
 

  • Start cooking your rice according to package instructions. Once done, set aside until serving.

  • Press your tofu to get out an extra water. After this, dice your tofu into one inch-ish cubes. Add your cubes to a large bowl and pour in soy sauce. Stir gently so all the tofu gets covered. Then, sprinkle in corn starch and make sure tofu gets evenly coated.

  • Heat your pan on medium high and add olive oil so that it coats the pan. Once the oil is hot after a few minutes, add the tofu into the pan in a single layer. Don't touch this for several minutes, and allow it to crisp, and then flip it and repeat for all the sides.
  • While tofu is cooking, prep all of your other ingredients. Defrost the edamame if needed, dice your mango, chop green onions, and make the cucumber salad.
    1 Mango, diced, 1 cup Edamame, 2 Green onions
  • To make your cucumber salad, chop the cucumbers into whatever size you want (I like spiralizing it like in the picture). Dump it into a bowl and mix in your honey, rice vinegar, soy sauce, sesame oil, and red pepper flakes. Taste and adjust amounts of things as needed. The fun thing about cucumber salad is there are so many options of what ingredients to add in, and its hard to mess up. Set aside until serving.

  • Make your spicy mayo by mixing together 2 parts mayo to one part sriracha, and then adding a splash of soy sauce. Set aside until serving.
    1/4 cup Mayo, 1/8 cup Sriracha, 1 tbsp Soy sauce
  • Assemble your bowl once tofu and rice are cooked. Lay a bed of rice in your bowl, and place everything on top! Top your bowl with furikake (or sesame seeds) and spicy mayo.
