Spicy Pumpkin Pasta

Think spicy vodka pasta, except a swap with pumpkin. So fall and delish.

  • Saucepan
  • Medium pot

Ingredients
  

  • 8 oz Pasta Half a package
  • 1/4 cup Olive oil
  • 3 cloves garlic minced
  • 1/3 cup pumpkin puree
  • 2/3 cup heavy cream
  • 1 tsp red pepper flakes
  • 1/3 cup parmesan cheese (grated)
  • pasta water
  • Salt and pep

Instructions
 

  • Bring a large pot of water to boil (salt it!!) And cook pasta according to directions. Reserve some pasta water to add in later
    8 oz Pasta
  • In a saucepan, heat your oil on medium and then add garlic and stir for a couple minutes. Add in your pumpkin puree and continue to stir
    1/4 cup Olive oil, 3 cloves garlic, 1/3 cup pumpkin puree
  • Add heavy cream and mix until incorporated. Simmer a couple minutes
    2/3 cup heavy cream
  • Add red pepper flakes, salt, pepper and stir again
    1 tsp red pepper flakes, Salt and pep
  • Add in your parm, and then slowly add in some pasta water and stir to combine. Mix until smooth and creamy, adding pasta water as needed.
    1/3 cup parmesan cheese (grated), pasta water
  • Toss in the cooked pasta and make sure its evenly coated. Top with more parm and serve.
