Spicy Pumpkin Pasta
Think spicy vodka pasta, except a swap with pumpkin. So fall and delish.

- Saucepan
- Medium pot
Ingredients
- 8 oz Pasta Half a package
- 1/4 cup Olive oil
- 3 cloves garlic minced
- 1/3 cup pumpkin puree
- 2/3 cup heavy cream
- 1 tsp red pepper flakes
- 1/3 cup parmesan cheese (grated)
- pasta water
- Salt and pep
Instructions
- Bring a large pot of water to boil (salt it!!) And cook pasta according to directions. Reserve some pasta water to add in later8 oz Pasta
- In a saucepan, heat your oil on medium and then add garlic and stir for a couple minutes. Add in your pumpkin puree and continue to stir1/4 cup Olive oil, 3 cloves garlic, 1/3 cup pumpkin puree
- Add heavy cream and mix until incorporated. Simmer a couple minutes2/3 cup heavy cream
- Add red pepper flakes, salt, pepper and stir again1 tsp red pepper flakes, Salt and pep
- Add in your parm, and then slowly add in some pasta water and stir to combine. Mix until smooth and creamy, adding pasta water as needed.1/3 cup parmesan cheese (grated), pasta water
- Toss in the cooked pasta and make sure its evenly coated. Top with more parm and serve.
