Pea and Pancetta Pasta
This is one of my favorite easy pastas
Equipment
- Saucepan
- Medium pot
Ingredients
- 1 cup pasta
- 1/3 cup pancetta or proscuitto
- 2 cloves garlic
- 1/2 cup frozen peas
- 1/2 cup heavy cream
- lemon juice
- 1/3 cup parmesan cheese
- cracked pepper
Instructions
- Boil water in a saucepan for your pasta, salt generously. Once boiling, add in pasta. Save about 1/4 cup of the salty pasta water for later.1 cup pasta
- Heat a pan over medium and then add in some olive oil. Once hot, throw your pancetta into the pan and stir around until it gets crispy- this takes a couple of minutes.1/3 cup pancetta or proscuitto
- Once the pancetta crisps, add in the minced garlic and stir frequently.2 cloves garlic
- After another minute, pour your frozen peas into the pan and continue to stir frequently1/2 cup frozen peas
- Lower the heat and add in the heavy cream, a squeeze of lemon juice, and cracked pepper. Stir, and then add in cooked pasta.1/2 cup heavy cream, lemon juice
- Grate plenty of parmesan into the pan, and then add in some pasta water and stir until everything is well combined and creamy1/3 cup parmesan cheese
Notes
In the picture I used prosciutto because I could not find pancetta at the store, but I would definitely recommend using pancetta for this. Maybe just personal preference, but I think it goes better.
