Lemon parmesan tuna pasta
This recipe is a mainstay and I have been perfecting for years. Comforting, but also protein rich.
Equipment
- Saucepan
- Medium pot
Ingredients
- 1 cup pasta
- 1 can Tuna in olive oil
- 1 tbsp olive oil
- 2 cloves garlic, minced
- 1 tsp red pepper flakes
- 1/2 lemon, juiced
- 1/4 cup parmesan cheese
Instructions
- Boil water in a saucepan for your pasta, salt generously. Once boiling, add in pasta. Save about 1/4 cup of the salty pasta water for later.1 cup pasta
- In a separate pan, heat olive oil over medium heat. Once hot, add minced garlic and red pepper flakes. Stir until garlic is fragrant.1 tbsp olive oil, 2 cloves garlic, minced, 1 tsp red pepper flakes
- Add tuna to the pan with garlic and break up the chunks. After about a minute, add in the cooked pasta. Stir.1 can Tuna in olive oil
- Add in some of the lemon juice and reserved pasta water. Add parmesan cheese and stir. Depending on consistency, add more pasta water/lemon juice if you want it saucier.1/2 lemon, juiced, 1/4 cup parmesan cheese
- Plate and serve immediately, I typically add more parmesan and red pepper flakes on top.
