Kimchi Fried Rice

Ingredients
  

  • 1-2 cups Day old rice (cold)
  • 1/2 cup Kimchi
  • 2 Eggs
  • 2 tbsp Soy Sauce
  • 1/2 tbsp Sesame Oil
  • 1 tbsp Oil for cooking
  • 2 tbsp Mayo
  • 1 tbsp Sriracha
  • Furikake

Optional Toppings

  • Protein such as tofu, chicken, canned tuna

Instructions
 

  • Heat a large pan over medium-high and add in oil.
    1 tbsp Oil for cooking
  • Once this is hot, add in your cold rice and pack it in an even layer. Don't disturb for several minutes so it crisps.
    1-2 cups Day old rice (cold)
  • Meanwhile, cook your eggs to your liking in a separate pan. I like over-easy.
    2 Eggs
  • Stir around rice after a few minutes and let it continue to crisp. Pour in your soy sauce and sesame oil and stir. Add in kimchi and stir again, then allow it to cook again undisturbed for several minutes.
    2 tbsp Soy Sauce, 1/2 tbsp Sesame Oil, 1/2 cup Kimchi
  • Once rice is cooked and a little crispy, plate it. Top each bowl with an egg, and then sriracha and mayo. I also like to sprinkle furikake on top.
    Furikake, 1 tbsp Sriracha, 2 tbsp Mayo
