Ingredients
  

  • 1 cup pasta
  • 1/2 cup spinach
  • 1/3 cup peas
  • 1/4 cup cashews
  • 3 tbsp nutritional yeast
  • 2 cloves garlic
  • 1/4 cup milk
  • 1/2 lemon juiced
  • salt and pepper
  • paprika

Instructions
 

  • Cook your pasta according to the package instructions. Reserve 1/4 cup of the pasta water before draining.

  • In a blender, combine the cashews, spinach, peas, garlic, nutritional yeast, lemon juice, milk, salt, pepper, and spices.

  • Blend until smooth and creamy. If the sauce is too thick, gradually add more milk or the reserved pasta water
  • Pour the sauce into a pan and heat it over medium-low, adding the reserved pasta water if needed for thinning. Combine the cooked pasta with the blended sauce, tossing well until coated evenly.
