Green Goddess Shrimp Rolls

Think lobster roll… except budget version.

Ingredients
  

  • 10 oz Frozen shrimp
  • 2 tbsp Butter
  • 1/4 cup Mayo
  • 3 green onions, chopped.
  • Green goddess seasoning (trader joes)
  • 1/2 Lemon, squeezed
  • 4 Brioche hot dog rolls

Instructions
 

  • In a bowl, mix your mayo, lemon juice, green onion, green goddess seasoning, and salt and pepper. Set into fridge while you cook the shrimp.
    1/4 cup Mayo, 3 green onions, chopped., Green goddess seasoning (trader joes), 1/2 Lemon, squeezed
  • Thaw your shrimp. Once thawed, heat a pan over medium and melt your butter in the pan. Add shrimp into pan and cook 1-2 minutes per side or until cooked through. Once cooked, remove from pan and chop a little so the pieces are smaller.
    10 oz Frozen shrimp, 2 tbsp Butter
  • Mix your shrimp into the mayo mixture. Put back in the fridge.
  • Grill your hotdog buns slightly, make sure to not burn! Fill the buns with your shrimp mixture and enjoy.
    4 Brioche hot dog rolls

Notes

This feeds two if you want two stuffed rolls each, otherwise it is 4.
