Cottage Cheese “Shakshuka”

This is a play on Shakshuka, except simpler and higher protein! I was close to licking the skillet clean with this one.

Ingredients
  

  • 1 1/2 cup Little tomatoes
  • 2 tbsp Olive oil
  • 1/2- 3/4 cup Cottage cheese
  • 4 Eggs
  • Red pepper flakes
  • Italian seasoning
  • Salt and pepper
  • 4 slices Sourdough bread (for dipping)

Instructions
 

  • Heat your skillet over medium heat. Add your tomatoes to the pan, and pour in the olive oil and sprinkle with salt.

  • Stir around so tomatoes are covered in oil and salt, and then cover with a lid and let cook for several minutes.
  • Once tomatoes look softer, smash them down with a spoon and stir. Sprinkle in red pepper flakes.

  • Create holes in the tomato mixture with a spoon, and crack your eggs into the holes. Create a couple other holes, and fill those with cottage cheese.
    4 Eggs, 1/2- 3/4 cup Cottage cheese
  • Cover the pan with the lid and let cook for several minutes until the eggs are done to your liking.
  • Season with cracked pepper and Italian seasoning. Serve with bread for dipping.
