Chickpea Tacos

These have been a mainstay for years. They come together within 10 minutes, and are such a nice light meal. These are easy ingredients to always have on hand too.

Ingredients
  

Chickpeas

  • 1 tbsp olive oil
  • 1 can chickpeas
  • Garlic powder
  • Chili powder
  • Cumin
  • Paprika
  • Salt and pepper
  • Hot sauce
  • Cayenne

Taco Toppings

  • 1 avocado
  • 1/2 lime
  • hot sauce
  • greek yogurt

Instructions
 

  • Heat your pan over medium and add in olive oil. While its heating, strain your chickpeas and rinse with water, and then pat dry.
    1 tbsp olive oil, 1 can chickpeas
  • Once pan is hot, dump in the chickpeas. Mash them a little bit. Dump in all of the seasonings mentioned above, don't be shy. Pour in the hot sauce and stir around. Cook through.
    Garlic powder, Chili powder, Cumin, Paprika, Salt and pepper, Cayenne, hot sauce
  • Heat up tortillas and fill with chickpeas. Top with avocado, lime, plain greek yogurt, and hot sauce.
    1 avocado, 1/2 lime, greek yogurt, Hot sauce
