Caesar Chicken and Broccoli

Healthy and easy sheet pan dinner, great for a meal prep!

Ingredients
  

  • 1 lb Boneless skinless chicken thighs
  • 2-3 Sweet potatoes, cubed
  • 3-4 cups Broccoli, chopped
  • 3 tbsp olive oil
  • Salt
  • Pepper
  • Kinder's Woodfired garlic seasoning (trust me)

Caesar Dressing

  • 1/2 cup Plain Greek Yogurt
  • 1/2 Lemon, juiced
  • 1.5 tsp Dijon mustard
  • 1-2 Garlic cloves
  • 1.5 tbsp olive oil
  • Black pepper, to taste
  • 1 tsp Capers (optional, but I recommend)

Instructions
 

  • Preheat the oven to 400. While it is preheating, chop up your sweet potatoes and broccoli.
    2-3 Sweet potatoes, cubed, 3-4 cups Broccoli, chopped
  • Pull out 2-3 sheet pans and line with parchment paper. On one pan, spread out your broccoli. Pour on some olive oil and toss, sprinkling with salt and pepper. Spread out evenly on the pan. Repeat the same step with your sweet potato on another pan.
    3 tbsp olive oil, Salt, Pepper
  • On a third pan, lay out your chicken thighs. Pat them dry and then rub a little olive oil onto each of them. Cover with the woodfired garlic seasoning.
    1 lb Boneless skinless chicken thighs, Kinder's Woodfired garlic seasoning (trust me)
  • Add your broccoli and sweet potatoes to the oven once preheated.
  • After about 5 minutes, add your chicken into the oven as well. Chicken thighs typically take about 20 minutes in the oven. Stir your sweet potatoes and broccoli occasionally so that they crisp evenly.
  • While everything is cooking in the oven, make your caesar dressing. Add all ingredients to a blender and blend until combined.
    1/2 cup Plain Greek Yogurt, 1/2 Lemon, juiced, 1.5 tsp Dijon mustard, 1-2 Garlic cloves, 1.5 tbsp olive oil, Black pepper, to taste, 1 tsp Capers (optional, but I recommend)
  • After about 20 minutes, check your chicken, it is done at 165F. If you don't have a meat thermometer, just let it cook for 25 mins.
  • Once your sweet potatoes and broccoli have some crisp to them, pull them out too.
  • Plate your chicken, broccoli, and sweet potatoes and then top with caesar dressing. I also added some hot sauce!
