Feta and Egg White Breakfast Sandwich

This is a copycat of the Starbucks feta and egg white flatbread sandwiches!

  • 13×9 ish Baking Dish

Ingredients
  

  • 1 Package Lavash bread
  • 16 oz Egg whites
  • 1/2 package Spinach Chopped
  • 1/3 cup feta
  • Sun dried tomatoes
  • Salt and pepper
  • Garlic Powder
  • Olive oil

Instructions
 

  • Preheat oven to 350
  • Line your baking dish with parchment paper. You can put olive oil under the parchment paper so that it sticks to the pan

  • Dump your egg whites into the dish. Then add in all other ingredients: spinach, sun dried tomato, feta, salt, pepper, garlic powder. Mix a little so all the toppings are evenly distributed.
    16 oz Egg whites, 1/2 package Spinach, 1/3 cup feta, Sun dried tomatoes, Salt and pepper, Garlic Powder
  • Put the pan into the oven and let bake until the eggs have cooked, probably about 20 minutes.
  • Once the eggs are cooked, take out of the oven and let cool a little.
  • Once cooled, cut into 4 long strips. Place each strip into the middle of the lavash bread and fold so that you have a nice little wrap.

  • Heat a pan on medium high and grill each flatbread on both sides so that you get a nice crisp. Repeat for all wraps.
  • Let the wraps cool and refrigerate. I like to freeze these, they heat back up great!

Notes

This is such a great meal prep to make ahead of time, you can double it and put it all in the freezer! Definitely make sure that the sandwiches have cooled before freezing, and also try to keep them flat while freezing so that they keep their shape.
